All this week on New Mexico Style we are debuting Healthy Snack Cooking Segments presented by Smiths.
Everyday we are going to showcase a new recipe that is healthy, affordable, tasty, and creative. Today was the first day, and we wanted to highlight some easy healthy alternatives for grocery items that most families get. ex/ tortillas, peanut butter, jelly, and crackers.
Our first recipe was Banana Sushi.
1 Whole Wheat Tortilla
2 TBS Peanut Butter
1 TBS Honey
1 TBS Raisins
1/4 tsp Cinnamon
Spread peanut butter across the tortilla leaving 1 inch around the edge. Place Banana in the middle and squish banana flush against tortilla. Shake Cinnamon across the tortilla. Drizzle Honey zig-zag across tortilla. Add raisins dispersed evenly across tortilla. Wrap one end of tortilla around banana and continue to roll until it resembles sushi. Cut in to 2 inch slices and assemble on plate. Apply more cinnamon and honey for presentation.
This one is easy and ridiculously tasty. Definitely try this at home!
