Healthy Snacks Segment Series Presented by Smiths: Part 5

Today we made a healthy and easy snack that can easily be turned into dinner…Lettuce Wraps!

This takes little time to get ready and gets the kids involved in creating their meal by picking which ingredients they want in the wrap. Here is the recipe and remember you can swap out any of the ingredients with things your family likes.

Ingredients:

1 head of soft-leafed lettuce (Bib or butter) washed and separated

2 cups of ground turkey (or chicken, tofu, beef)

1 cup of wild whole grain rice

2 cups of veggies (grated carrots, sliced bell peppers, sliced radishes)

1 cup of fresh herbs (basil, mint, and/or cilantro)

1 /3 cup of crushed peanuts

2 tablespoons of terriyaki sauce (I like the Veri Terriyaki brand)

2 tablespoons of lime juice

Directions:

Arrange the lettuce, turkey, different veggies, herbs and peanuts in small bowls or on plates

Assemble wraps by placing rice at the base, turkey, chosen veggies, and then top off with terriyaki sauce and lime juice, sprinkle peanuts.

Healthy Snacks Segment Series Presented by Smiths: Part 4

Today the snack was “Ants on a Log” a perfect 5 minute snack for mom’s on the go. Its takes all of 3 ingredients and is an interactive food that your kids are going to love!

Ingredients:

3 tablespoons of reduced-fat cream cheese

2 celery stalks cut

1/4 cup raisins

Directions:

Spread cream cheese inside curved part of celery stalks until even. Then place multiple raisins in the cream cheese to replicate ants sitting on a log. Enjoy!
